The inside, similar to manteca, is soft and stringy The burrata is excellent when it’s accompanied with a few slices of tomato like in a caprese or when it’s dressed with a drizzle of extra virgin olive oil. It is also ideal to be tasted with the typical Capocollo. The ideal wine to drink with this delicacy must be dry white, with a fruity aroma.
